Today’s selection of soups for the Soup of the Week Club is brought to us by Joyce in Design. Chicken with Rice– comforting for the soul and warming for the body. I dunno about you, but it’s been sooooo cold lately! Nice to have a cup of piping hot soup to chase the shivers away!
Here’s Joyce’s recipe:
1 ½ onion chopped
1 ½ cups celery chopped small
1 ½ cups carrots chopped small
6 garlic cloves chopped finely or crushed
2 Tbs olive oil
2 Tbs butter
12 cups chicken stock
4 cups cooked and shredded chicken
1 box of prepared wild and long grain rice (per package instructions)
1 package of dried chicken and noodle soup mix – mix only requires chicken stock to complete…it was purchased from a gift-y type of store – use the noodles for some other occasion J
Fresh ground pepper (1/8 tsp or so)
Sauté onion in oil and butter for 5 minutes. Add celery, garlic and carrots and sauté for another 5 minutes. Add soup packet mix and sauté for another minute or two. Then add chicken stock and pepper. Simmer for 2 hours. Add shredded chicken and rice and finish cooking –about 10 minutes.
