I don’t know about you, but I feel like I ate more than my fair share of nachos, hot dogs, and brownies at the Super Bowl party on Sunday. I mean, the Seahawks won their first Super Bowl, and that qualifies as a chance to indulge just a bit, don’t you think?! Thankfully it was Susan’s turn to bring in a slow cooker delicacy this Monday. Susan is very health-oriented in her approach to cooking, but her contribution didn’t compromise on the flavor. Savory and not too heavy, her Creamy Italian Chicken Tomato Soup, was the perfect thing to put in my stomach after a night of Super Bowl celebrating!!!
As I perused over the ingredients of this crock pot creation, I was pleased to see that it is a Paleo-friendly and Lactose Intolerant-friendly recipe. You wouldn’t know it until you read the recipe, but this soup calls for a can of coconut milk instead of cream! The coconut flavor wasn’t even detected by my tastebuds as I slurped down this satisfying soup! The savory Italian seasonings, herbs, and veggies add just the right pungency to balance it out. And it couldn’t be easier to prepare- add all the ingredients to your crock pot, set the temp to your preference, and hours later, you’ve got yourself a tasty soup just waiting to be served up! Now that’s what I call a ‘Soup’-er Bowl!!
