Did you know that the Sunchoke, also known as the Jerusalem Artichoke, is a species of sunflower native to the United States and North America? The flowers resemble a garden sunflower, while the tuber is used as a root vegetable … and they’re in season right now! Look for them in your local health food store. Their flavor is slightly nutty and sweet and they are nutritious, too. Rich in minerals such as potassium, try this roasted sunchoke recipe with some garlic, olive oil, and seasoning to add something different to your meal repertoire!
Or wash well and slice for a crunchy raw addition to your next salad!
